I had an idea, to randomly drop a character into the Realms and see how hard it would be to survive Dwarf Fortress style. Liberal use of random encounter tables would feature.

Is there a better or more thorough list anywhere of Faerunian locations and sublocations than just the Wikipedia page?

Also, all the old MC releases had encounter tables too, including the new monsters.

That's correct. It's listed right here on Amazon. I haven't seen the pdf on the DM's Guild yet.

For encounter tables look to old products. Elminster's Ecologies is a good place to start.
