Sollars' Forgotten Realms Wiki article reports him as being a "minor power", likely based off of this line on page 80 of The Throne of Bloodstone: "St. Sollars and all the other minor powers of Mercuria revere [Bahamut]."

In the article, minor power is considered a synonym for demipower, which works out if you consider that for Sollars and the other powers of his "level" would be one step lower from Bahamut, a lesser power. However, if I'm not mistaken, the formalized use of "power" as a synonym to "deity" or "god" is something introduced in second edition, and might not have been the intended meaning here at all.

Are there any later sources that support Sollars being a demipower?

Well, you know - see someone titrating Corellon's blood, call the yeth hounds.

He may be a quasideity sponsored by one or more gods.
Or a non-power divine servant (like Chosen, shadowstaves, shards or some among the "generic" planar entities including celestials, fiends, etc), when worship is concerned mostly working as an alias for Ilmater.
Much like e.g. beholder cultists may venerate specific beholders, but they all count as worshippers of Great Mother.

From Faiths and Avatars entry of Ilmater

The church of Ilmater is different from many Faerūnian faiths in that it has many saints, among them St. Dionysius and St. Sollars the Twice-Martyred (whose symbol is a yellow rose).

There is no correlation as to what a "saint" power level is amongst the church of Ilmater, but I'd put it on the level of something like a chosen.
